Bite-Sized Peanut Butter Pies with Chocolate Crust

Ingredients:

Chocolate Crust:
  •     2 cups all-purpose flour
  •     4 tablespoons unsweetened cocoa powder
  •     4 tablespoons sugar
  •     1 teaspoon kosher salt
  •     1 stick unsalted butter, cold
  •     4 tablespoons Crisco
  •     Yolk from 2 large eggs
  •     6 – 8 tablespoons iced coffee (Ice water will work as well.)
Peanut Butter Filling:
  •     1 cup creamy peanut butter
  •     1 package (8 ounce) cream cheese, softened
  •     1 teaspoon vanilla
  •     1 1/4 cup confectioners’ sugar
  •     1 package (8 ounce) Cool Whip, thawed
Chocolate Drizzle:
  •     1 cup semi-sweet chocolate chips
  •     1 tablespoon Crisco
  •     Chopped peanuts (optional)
